Leatherby's

We decided to go to Leatherby's because Kevin wanted to try the Daddy Dave's Sundae challenge to defeat the gargantuan mountain of ice cream all by himself. :O
Aaron and I decided to share a Rich's Banana Split. :) It looks so puny compared to Kevin's.

Unfortunately, Kevin was not able to devour the entire sundae because he was too cold. :( But he did eat 3/4ths of it! Next time we will remind him to bring a jacket.

Getting Rid of Them Cake/Brownie Mixes

I was able to get rid of 4 boxes of cake/brownie mixes! Baking is so tiring. I brought most of these goodies to Karen's house, so it is no longer my problem. Hehe.

Cheddar Bay Biscuits


I found a bunch of copy-cat recipes for those delicious biscuits from Red Lobster, so I just HAD to try it. It turned out pretty well and it was sooo easy to make.

Cheddar Bay Biscuits (yields approximately 12 biscuits)

Biscuits:
2 1/2 cups of Bisquick
1 cup shredded sharp cheddar
1/2 tsp garlic powder
3/4 cup milk

Butter Glaze:
3 tbsp melted butter
2 tsp dried oregano
1/4 tsp garlic powder or garlic salt

1. Preheat oven to 400F. Prepare a baking sheet greased with butter or cooking spray.
2. Combine Bisquick, garlic powder and shredded cheese in a large bowl.
3. Add milk and stir until well mixed. (Dough will be sticky!)
4. With a spoon, drop biscuit-sized clumps onto the baking sheet. The dough will not change shape after baking, so mold into desired biscuit shape.
5. Bake for 10-12 minutes or until biscuits are slightly brown around the edges.
6. While the biscuits are baking, prepare the butter glaze by combining the melted butter, oregano, and garlic powder/salt.
7. As soon as you remove the biscuits from the oven, brush the biscuits until they are well coated. Serve warm.
